miscellaneous

here's the scottish shortbread recipe i baked for the whimsey project's fourth anniversary on this week's whimical wednesday:

mix together:
1 and 1/4 cups of flour
3 tablespoons sugar

cut in til mixture is crumbly:
1/2 cup of cold butter

once mixture is crumbly, finish blending the dough by hand.  it will still be crumbly and somewhat stiff.  put on a lightly greased cookie sheet, forming an even layer of dough into a square or rectangle.  use a spring form pan and the shape will be round.  lightly score the dough to create pieces (do not cut through the dough).

bake at 325 degrees for 25 to 30 minutes.  the dough should be light golden brown (as the dough bakes, the butter in the dough melts and the shortbread becomes smooth and solid).

after removing the shortbread from the oven, gently cut the pieces by scoring completely through the baked dough using the pre-scored lines. let rest for about 15 minutes.

store shortbread in air tight container (if there's any left to contain)!
